I'm guessing 3-rings means 2.5 mm jack , and 2-rings means 3.5 mm jack ? Then I heard 2-rings also means stereo sound ? Just wanting to get all the info correct.

3-ring is stereo, 2-ring is mono. The number of rings is unrelated to the size (2.5 vs. 3.5mm).

In addition 2-ring: mono and 3-ring: stereo, there are 3-ring TRS (tip/ring/sleeve) connectors.

The TRS connectors can be used in conjunction with balanced (shielded) cabling used in pro-grade audio and XLR connectors. TRS connectors can be 1/4" or 1/8" (3.5mm). Many decent audio mising boards have both XLR and TRS connectors - another example is the Zoom H4 field audio recorder has combination XLR/TRS connectors for external mics...

Trying to use TRS connectors as stereo connectors generally does not work because of the way the grounding connection (sleeve) is implemented.
